Di Pacci — Spring-Lever Commercial Espresso Machine

La San Marco 80 Leva Coffee Machine

The La San Marco 80 Leva brings a true spring-lever espresso to a commercial bar, with a servo-assisted brake that slows each lever's return so it is safe and smooth to work all day.

The La San Marco 80 Leva is an Italian lever commercial espresso machine from the NEW 80 series, built in 2 group and 3 group versions. Each group is driven by a spring-loaded lever rather than a pump, giving the naturally declining pressure profile lever fans love for sweet, rounded shots. A large boiler (12 litres on the 2 group, 19 litres on the 3 group across the NEW 80 series) supplies steam and hot water while you brew.

What sets the 80 Leva apart from older spring levers is La San Marco's LEVA CLASS servo-assisted braking, which damps the lever on its return stroke. Baristas get the control and theatre of a lever machine without the kick-back that makes traditional levers tiring to work through a rush.

Key Features of the 80 Leva

🎚️ Spring-lever groups

Pulling the lever compresses a spring that then presses water through the coffee at a gently falling pressure, for a sweet, syrupy shot.

🛡️ LEVA CLASS servo braking

A servo-assisted brake slows the lever on its way back up, so it returns smoothly instead of snapping back.

💨 Lever-operated steam and water

Manual steam and hot water levers give instant, intuitive control when texturing milk or topping up long blacks.

☕ Steam cup warmer

A steam-heated cup warmer comes standard, so cups are warm and ready during service.

💧 Automatic water level

The boiler refills itself and a visible level indicator shows the water level at a glance.

✨ Classic Italian design

The tall levers and polished NEW 80 bodywork make the machine a centrepiece on the bar.

How a Spring Lever Shapes the Shot

A pump machine pushes water through the coffee at a steady set pressure. A spring lever works differently: the barista loads a spring, and the spring does the brewing.

  • Lowering the lever opens the group and lets water soak the coffee bed before any real pressure builds, giving a natural pre-infusion.
  • Releasing the lever lets the compressed spring push the piston down, starting at high pressure and easing off as the spring extends.
  • LEVA CLASS servo braking then controls the lever's travel back up, so the lever doesn't kick back when the shot finishes.

That falling pressure curve is what gives lever espresso its sweet, rounded body, and the servo brake makes it practical to pour all day.

80 Leva 2 Group vs 3 Group

Both share the same lever groups and controls. The choice comes down to volume and bench space.

Feature 2 Group 3 Group
Boiler (NEW 80 series) 12 L 19 L
Groups 2 levers 3 levers
Best for Most cafés and restaurants High-volume bars with two people on espresso
Cup warmer Steam-heated, standard Steam-heated, standard

Di Pacci recommendation: Choose the 2 group for most cafés and restaurants, and the 3 group only when two baristas regularly pull shots at once. Don't bother with the 80 Leva if you need volumetric buttons and automatic cleaning for a high-turnover team; a pump machine such as the Sanremo Zoe Compact is easier to train on.

Best Grinders for the 80 Leva

Lever espresso rewards a grinder with fine, stable adjustment, because the spring sets the pressure and the grind sets the flow.

Grinder Burr Why it pairs well
Fiorenzato F64 E PRO 64 mm flat Reliable on-demand dosing at a price that suits the machine
Fiorenzato F83 E PRO Sense 83 mm flat Larger burrs for faster grinding on a busy 3 group
Mahlkönig E65S 65 mm flat Precise, consistent doses for back-to-back lever shots

La San Marco 80 Leva Coffee Machine — Frequently Asked Questions

Is the La San Marco 80 Leva a spring-lever machine?

Yes. Each group is a manual spring lever, so the spring presses water through the coffee at a gradually falling pressure rather than a pump holding a fixed pressure.

What does LEVA CLASS servo-assisted braking do?

It slows the lever on its return stroke after a shot, so the lever comes back up smoothly instead of springing back. That makes the machine safer and less tiring to work.

Can I steam milk while pulling a shot on the 80 Leva?

Yes. The boiler supplies steam and hot water through manual lever taps while the groups brew, so you can steam and pour at the same time.

How big is the La San Marco 80 Leva boiler?

Across the NEW 80 series the boiler is 12 litres on 2 group models and 19 litres on 3 group models.

What does the 80 Leva need for installation?

It must be plumbed to mains water and a drain and connected to a suitable single-phase or three-phase supply. Call (02) 9758 0760 so we can confirm power options and organise installation.

Does Di Pacci service La San Marco machines?
