Di Pacci — Cold Brew — Toddy — Commercial Cold Brew System — Café + Restaurant

Toddy Commercial Cold Brew System + Lift

5 Gallon Capacity · ≈9.5L Concentrate Per Batch · 67% Less Acid · Patented Cold Water Brewing · Toddy Lift Included · NSF Certified · Coffee + Tea — Non-Electric

The Toddy Commercial Cold Brew System with Lift is the gold standard for high-volume cold brew in cafés, coffee shops, and restaurants. Built around Toddy's patented cold water brewing process, this non-electric system produces smooth, full-bodied cold brew concentrate with approximately 67% less acid than conventionally brewed coffee — delivering a naturally sweet, mellow flavour that needs no sugar or dairy to taste balanced. Steep for 8–24 hours, drain via the drip-free spigot, and store concentrate in the refrigerator for up to two weeks. A single 5-gallon batch using approximately 2.27kg of coarse-ground coffee yields around 9.5L of concentrate — enough for up to 108 × 470mL drinks per batch.

This bundle includes the Toddy Lift — Toddy's patented platform that sits at the base of the brewing container and elevates the filter bag above the spigot outlet. The Lift eliminates the need to manually squeeze or press the filter bag to recover concentrate — the elevated grounds continue to drain passively for 15–30 minutes after the initial decant, increasing overall yield with no extra effort. Two-stage filtration (disposable paper filters + reusable cloth strainer) ensures clean, sediment-free concentrate. NSF certified, made in the USA, and dishwasher safe — the Toddy Commercial System is the choice of leading specialty coffee shops worldwide for reliable, consistent cold brew at volume.

Key Features
Patented Process Cold Water Brewing — Smooth, Low-Acid, Full-Bodied Concentrate Toddy's patented cold water extraction process steeps coarse-ground coffee in room-temperature water for 8–24 hours, producing a concentrate with around 67% less acid than hot-brewed coffee. The result is a naturally smooth, full-bodied concentrate that tastes sweeter and less bitter — ideal for iced lattes, cold brew on tap, and frozen drinks without the need for added sugar
The Lift Toddy Lift — Patented · No Squeezing · More Yield The Toddy Lift sits feet-down at the base of the brewing container and acts as a shelf for the filter bag. When draining is complete, closing the spigot and letting the elevated grounds rest for a further 15–30 minutes allows additional concentrate to passively drain — no manual pressing or squeezing required. This increases total yield per batch and reduces strain on the filter bag, lowering the risk of tearing
Filtration Two-Stage Filtering — Paper + Reusable Cloth Strainer The system uses a dual-layer filtration approach: a large disposable paper filter inside the reusable cloth outer strainer. This two-stage setup captures fine particles that would otherwise cloud or over-bitter the concentrate, producing a clean, sediment-free cold brew with excellent clarity and a smooth mouthfeel
Volume + Storage Batch of 108 Drinks · 2-Week Concentrate Shelf Life A single batch uses approximately 2.27kg of ground coffee and produces around 9.5L of concentrate — enough for up to 108 × 470mL drinks. Concentrate can be stored refrigerated for up to two weeks in airtight containers, making it practical to brew ahead for peak service periods without daily preparation. Works equally for tea and chai cold brew
How to Brew — 5-Step Process
1 Insert the Lift feet-down into the brewing container, making sure not to obstruct the spigot
2 Place filter bag on the Lift, add ≈2.27kg of coarse-ground coffee, then pour in approximately 11.4L of room-temperature water. Cover and steep for 8–24 hours
3 Drain concentrate through the spigot into airtight storage containers or Toddy storage decanters
4 Close the spigot and allow the elevated grounds to rest for a further 15–30 minutes — concentrate continues to passively drain from the Lift into the container below
5 Decant the remaining concentrate, refrigerate, and clean the system. Concentrate keeps for up to 2 weeks refrigerated

Frequently Asked Questions
The Toddy Lift is a platform that sits at the base of the brewing container and elevates the filter bag above the spigot outlet. This solves two problems with standard cold brew systems: first, it ensures the spigot never clogs because the filter bag is held above it rather than sitting against it. Second, after you drain the initial concentrate through the spigot, closing it and letting the elevated grounds rest for 15–30 minutes allows additional concentrate to passively drain out of the grounds — increasing your total yield per batch without any squeezing, pressing, or physical effort. It also reduces the risk of tearing the filter bag, which can occur during manual squeezing.
Hot water extraction dissolves acids from coffee beans rapidly — acids that contribute to the sharp, bright, or sour notes often associated with hot coffee. Cold water extraction is a much slower process that selectively draws out different compounds, producing a concentrate with significantly lower acid content (approximately 67% less than hot brewed coffee by Toddy's measurement). This results in a coffee that tastes naturally smoother and sweeter without added sugar, and is often preferred by people who find regular coffee too acidic or harsh on the stomach.
Cold brew concentrate produced in the Toddy Commercial System can be stored in airtight containers in the refrigerator for up to two weeks. This long shelf life is one of the most significant advantages for café operations — you can brew a full batch on a quiet day and serve from concentrate throughout the following two weeks, dramatically reducing daily preparation time and batch-to-batch inconsistency. Toddy storage decanters are available separately as the ideal storage solution.
Yes — the Toddy Commercial System works equally well for cold-brewed tea and chai concentrate. For tea, use approximately 900g (2lb) of loose-leaf tea and steep for 12–18 hours to yield approximately 7.6L (256oz) of concentrate. The recommended starting serve ratio is 1 part tea concentrate to 6–7 parts water, milk, or soy milk — adjustable to taste. Cold-brewed tea is naturally smoother and less tannic than hot-brewed tea, making it an excellent base for iced tea, milk tea, and chai lattes.
