After conducting research on how temperature affects the preservation of volatile aroma molecules and the resultant sensory flavour results in coffee, Paragon was developed in partnership with Zurich University of Applied Science (ZHAW).
Comparing the final brew to the identical brew without chilling, ZHAW found up to 40% more essential aroma volatile components.

Professor Chahan conducted research on extract chilling technology at the Coffee Excellence Centre in Switzerland. To improve your brewing technique, several other experts created and tested it.
About The Chilling Rock
It is made to efficiently extract any large or small pour-over. It is built with a metal container that stores liquid freezing solution to lengthen the period during which the rock is frozen.
Given that they have attained an equilibrium frozen temperature in the freezer over time, the chilling rock should be at freezer temperature (below -5 degrees C) and used within 10 minutes of being removed from the freezer.
